Beginners Questions • Gnome task bar

Hi

New users to debian 12. I am trying gnome desktop. couple of things I don't like
I would to have a button on the menu bar that list all of the application (with folders), i don't like having to press the windows button and then searching for my app
I would also like on the menu bar an icon for all of the apps I current have running. right now the only way I know how to swap - if the window is not visible is to alt+tab
